Up to 1000' ADB cable extenders. A must if you want to place your ADB I/O far away from your Mac.

XTension

Two-way, Mac X-10 software for use with CM11 and other X-10 interface boxes. This system together with ADB I/O(s) can allow you to build complete process control systems.

MAX

An interactive real-time graphic programming environment for multimedia.

IGOR PRO

A real-time graphing package for science and engineering applications.

Analog Devices

A great source for sensors, signal conditioners and other relevant devices.

National Semiconductor

On-line application notes (in PDF format) and a lot of other information.

Omega Engineering

Lots of serious measurement stuff. If you order the full catalog you will get about one shelf-foot of quality information.

DigiKey

Lots of neat stuff and an on-line catalog. This seems to be one of the favorites for small scale experimentation and hobbyists.

Radio Shack

Not much on-line.

ADIstruments

Interesting selection of medical/chemical probes. They also carry Mac science instrumentation and software.

Edmund Scientific

Print catalog has much more electronic stuff. So far we are only aware of their optics being on line.
